  1. Melt chocolate chips (30 sec, 50% power, stir, repeat until melted).
  2. Combine Chex, pretzels, and M&Ms.
  3. Pour melted chocolate over the mixture and stir to coat.
  4. Spread on parchment paper, sprinkle with jimmies, and cool for one hour before serving.

This Leprechaun Bait Chex Mix is so quick, easy, and fun to make. It’s a great treat for school parties, teacher’s gifts, party favors, etc!

  • large mixing bowl
  • rubber scraper
  • parchment paper
  • airtight container

Ingredients
 
 

  • 11 ounce bag white chocolate chips
  • 8 cups Rice Chex Cereal
  • 1 cup pretzel sticks broken in half
  • 9.6 ounce bag mint M&Ms candies
  • ¼ cup green jimmies or sprinkles (about 1 ounce of jimmies)

Instructions

  • In a heat-safe bowl, add the chocolate chips and melt in the microwave for 30 seconds on 50% power.
  • Stir and repeat until the chips are completely melted.
  • Combine the Chex, pretzel sticks, and M&Ms in a large bowl.
  • Pour the melted white chocolate over the Chex mixture and carefully stir until coated.
  • Spread the mixture over a long strip of parchment paper and sprinkle with jimmies.
  • Let it cool and harden for about 1 hour.
  • Break apart and store in an air-tight container for up to 5 days.

Notes

  • This recipe will make about 11 cups of Chex mix.
